6 Ounces Italian Tukey Sausage1 Tablespoon Olive Oil2 Teaspoons Garlic0.25 Teaspoon Freshly Ground Black Pepper3 Cups Baby Arugula Leaves2 Ounces Pecorino Romano CheeseCook pasta following package directions except salt and fat. Drain with pasta sieve over a bowl and reserve 2/3 cup of pasta liquid. Meanwhile, in a large skillet, heat oil over medium high heat. Cook sausage for 3 minutes in heated oil until browned, crumbling with spatula. Add garlic and sauté for just 30 seconds stirring constantly. Add pepper and tomatoes, cover and cook for about 2 minutes. Crush and mash tomatoes using back of the spoon. Reduce heat to low and cook covered for 3 minutes. Turn the heat off, add arugula and pasta along with 2/3 cup of its cooking liquid. Toss, sprinkle with Romano and serve.
