0.5 Teaspoon Salt & Ground Black Pepper1 Bunch Fresh Parsley2 Tablespoons Groundnut Oil0.33 Cup Butter1 Clove Garlic0.5 Medium Shallot5.5 Ounces Calf’s Liver0 A Squeeze Of Fresh Lemon JuiceIn a food mill, pulse parsley and garlic. Transfer the parsley mixture to a bowl. Add butter and with a fork, mash well. Place butter mixture onto a greaseproof paper and carefully, shape into a rectangle. Refrigerate until butter hardens.In a skillet, heat oil and cook the liver slices for about three minutes, without stirring. Flip and season with salt and black pepper. Cook for about three minutes. Remove from heat and transfer the liver slices to a serving dish. Cut the parsley butter into 4 equal sized pieces. Top each liver piece with parsley butter piece and serve.
