Ingredients:
1 Medium Egg4.5 Ounces Diced Green Chiles0.33 Cup Milk1 Pound Ground Beef15 Ounces Creamed Corn1 Teaspoon Chili Powder0.25 Teaspoon Salt0.25 Teaspoon Pepper2 Cups White Cheddar1.25 Cups Enchilada SaucePreheat oven to 400 degrees. Grease a 9x13 baking pan with cooking spray.
Whisk muffin mix, egg and milk and then gently fold in corn and Chiles. Fold the mixture into the greased baking pan. Bake for about 20 to 25 minutes or until completely set. In a nonstick skillet, brown beef with chili powder, cumin, salt, and pepper. Drain meat and set aside.
Once baked, reduce the oven heat to 350 degrees. Prick the bread using a fork. Pour enchilada sauce over the baked cornbread. Spoon cooked ground beef. And top with shredded cheese. Cover with aluminum foil and then bake again for 20 minutes more or until cheese is set. Remove from oven, pull off the foil and bake again for 5 to 10 minutes until cheese is golden. Top with your favorite salsa and sour cream if desired.
