0.5 Pound Bacon2 Cups Half-And-Half1 Medium Red Bell Pepper0.5 Cup All Purpose Flour1 Medium Onion4 Cups Chicken Broth1 Pound Frozen Corn3 Medium Potatoes1 Teaspoon Kosher SaltSauté bacon until crisp in a large saucepan over medium high heat for about 10 minutes. Drain bacon well on paper towels. Remove bacon grease leaving just 1 tablespoon behind in pan. Sauté onion and pepper for about 5 minutes or until soft. Add flour and stir for 3 minutes. Add potatoes, cooked bacon, broth, and corn. Bring to a boil, reduce to a simmer and cover and let simmer until potatoes are cooked, for 25 - 30 minutes. Stir in half and half and sprinkle with salt. Cook for another 5 minutes, or till soup has thick consistency .
