Bacon & Corn ChowderPT1H Serves 6 Ingredients: 0.5 Pound Bacon 2 Cups Half-And-Half 1 Medium Red Bell Pepper 0.5 Cup All Purpose Flour 1 Medium Onion 4 Cups Chicken Broth 1 Pound Frozen Corn 3 Medium Potatoes 1 Teaspoon Kosher Salt Sauté bacon until crisp in a large saucepan over medium high heat for about 10 minutes. Drain bacon well on paper towels. Remove bacon grease leaving just 1 tablespoon behind in pan. Sauté onion and pepper for about 5 minutes or until soft. Add flour and stir for 3 minutes. Add potatoes, cooked bacon, broth, and corn. Bring to a boil, reduce to a simmer and cover and let simmer until potatoes are cooked, for 25 - 30 minutes. Stir in half and half and sprinkle with salt. Cook for another 5 minutes, or till soup has thick consistency .
