Ingredients:
12 Fresh White Button Mushrooms1 Tablespoon Olive Oil3 Tablespoons Shallots2 Cloves Garlic3 Tablespoons Fresh Cilantro Leaves0 Juice Of 1 Lemon0.25 Teaspoon Salt0.25 Teaspoon Black Pepper4 Ounces Smoked Mozzarella0 Olive Oil Cooking Spray3 Tablespoons Fresh Parsley LeavesPreheat oven to 350 degrees. Remove stems from mushrooms and chop them finely. Keep mushroom caps aside. Heat olive oil in a 10-inch nonstick sauté pan over medium-high heat and sauté shallots for about 1 1/2 minutes. Add chopped mushroom stems and garlic and sauté for about 2 minutes. Remove from heat and stir in lemon juice, cilantro, salt and pepper. Arrange mushroom caps onto a nonstick baking sheet, hollow sides facing up. Arrange 1 mozzarella cube in each mushroom cap and top with 1/2 teaspoon of shallot mixture. Spray each mushroom cap with cooking spray slightly. Bake for about 10 minutes. Remove from oven and serve warm with sprinkling of chopped parsley.
