Remove stems from mushrooms and chop them finely. Keep mushroom caps aside. Heat olive oil in a 10-inch nonstick sauté pan over medium-high heat and sauté shallots for about 1 1/2 minutes. Add chopped mushroom stems and garlic and sauté for about 2 minutes. Remove from heat and stir in lemon juice, cilantro, salt and pepper.
