Beef & Rice SoupPT1H10M Serves 8 Ingredients: 1 Pound Ground Beef 1 Large White Onion 0.125 Teaspoon Kosher Salt 0 To Taste Black Pepper 3 Cloves Garlic 0.5 Teaspoon Dried Thyme 1.5 Teaspoons Sweet Paprika 2 Cans Petite Diced Tomatoes 5 Cups Beef Broth 8 Ounces Tomato Sauce 4 Cups Green Cabbage 1 Cup Cooked Brown Rice Brown ground beef seasoned with 1/4 teaspoon salt, in a large Dutch oven over high. Drain any excess fat and then bring heat down to medium low. Stir in thyme, paprika, onion and garlic and cook until onion is translucent. Add in cabbage, beef broth, tomatoes, tomato sauce and season with remaining salt and pepper. Bring to a boil. Cover and let simmer on low for about 35 minutes or until cabbage is soft. Stir in cooked brown rice and cook 5 more minutes.
