1 Pound Chicken Fillets2 Tablespoons Olive Oil4 Large Eggs4 Cups Cooked Rice2 Tablespoons Fresh Garlic6 Tablespoons Soy Sauce1 Tablespoon Sesame Seed Oil0.25 Teaspoon Salt0.25 Tablespoon Black Pepper2 Cups Frozen Carrots & Peas3 Tablespoons ScallionsMarinate chicken in a mixture of Sesame Seed Oil and 1 tablespoon of Soy Sauce.Scramble eggs in a large wok with one tablespoon of oil until fluffy. Remove from pan and set aside. Add reserved oil to the same pan and sauté chicken with garlic, salt and pepper. Cook until chicken is done, for about 5 minutes. Add cooked rice and stir fry for 2 to 3 minutes. Stir in cooked eggs along with vegetables and soy sauce. Sauté for just 5 minutes or until heated through.
