2 Medium Chicken Breasts0 To Taste Salt And Pepper1 Tablespoon Olive Oil0.75 Cup Basmati Rice (Uncooked)2 Tablespoons Red Onion2 Medium Bell Peppers1 Cup Corn Kernels0.5 Teaspoon Paprika1 Teaspoon Chili Powder0.5 Teaspoon Ground Cumin2 Teaspoons Lime Juice2 Teaspoons Sugar2 Tablespoons White Wine VinegarPreheat oven to 425 degrees F. Rub chicken with salt, pepper and drizzle with oil on both sides. Place on a baking dish and bake for 10 minutes. Flip the chicken and bake again for another 10 to 12 minutes or until cooked completely. Let sit the chicken for at least 10 minutes before slicing. Combine cooked rice, red onion, bell peppers and corn in a large bowl. In another bowl, add wine vinegar, lime juice, paprika, chili powder, cumin, sugar and ¼ cup olive oil. Toss until well combined. Drizzle rice salad with prepared vinaigrette and toss to coat. Divide salad among 4 lunch boxes, top with sliced chicken and refrigerate.
