1.5 Cups Whole Wheat Flour2 Teaspoons Baking Powder0.5 Teaspoon Salt2 Eggs1 Teaspoon Pure Vanilla Extract2 Tablespoons Honey0.25 Cup Coconut Oil1.5 Cups Blueberries1 Cup Grape JuicePreheat oven to 400 degrees F. Grease a 12 cup muffin tray with cooking spray or line with muffin liners. Whisk flour with baking powder and salt in a large bowl. Add 1 tablespoon of flour mixture to the berries, toss and set aside. In another bowl, combine eggs, vanilla, honey, oil and juice. Gradually add egg mixture to the flour mixture and whisk to combine. Avoid overmixing. Fold in berries. Dollop into the prepared muffin tin and bake for 15 minutes.
