1.75 Cups All-Purpose Flour1 Teaspoon Baking Soda1 Teaspoon Cream Of Tartar0.5 Teaspoon Salt1 Cup Unsalted Butter1.5 Cups Granulated Sugar1 Large Egg3 Lemons1 Tablespoon Lemon JuiceMix together flour, cream of tartar, baking soda and salt in a bowl. Add butter in another bowl and with an electric mixer, beat on medium-high speed till creamy. Beat in 1 cup of sugar till fluffy and light. Add egg, lemon juice and lemon zest and beat on medium-low speed till well combined. Slowly, add flour mixture and beat on low speed till just combined. With a plastic wrap, cover the bowl and refrigerate for at least 2 hours or overnight. Preheat oven to 350 degrees F. Arrange racks onto upper and lower-middle positions of oven. Line two baking sheets with parchment papers.In an 8-inch cake pan, place about ½ cup of sugar and keep aside. With 1 tablespoon of dough, make into about 1-inch balls. Coat the balls with sugar completely. Arrange balls onto prepared baking sheets in a single layer about 3-inches apart. Bake for about 12-15 minutes, rotating the baking sheets bottom to top and back to front once in the middle way. Remove from the oven and keep onto the wire rack to cool in the cookie sheets, for about 5 minutes. Carefully, invert the cookies onto the wire rack to cool completely before serving.
