9 Pounds Standing Beef Rib Roast2 Tablespoons Extra Virgin Olive Oil3 Tablespoons Kosher Salt0.33 Cup Mixed PeppercornsPreheat oven to 450 degrees. Arrange the rack in the middle of the oven. Place a rack in 13x9-inch roasting pan.Rub the roast with the oil evenly and sprinkle with kosher salt. In a folded kitchen towel, crush the peppercorns with a meat ponder.
