1 Cup Unprocessed Bran1 Cup Buttermilk3 Large Eggs4 Tablespoons Butter0.5 Cup Sugar6 Tablespoons Molasses0.5 Teaspoon Vanilla4 Medium Bananas2 Cups All-Purpose Flour0.25 Teaspoon Salt1 Teaspoon Baking Powder1 Teaspoon Cinnamon4 Tablespoons Ground FlaxPreheat your oven 350 degrees. Line a muffin tin with paper cups. Take buttermilk in a medium bowl and add in bran to soak for 5 minutes.In the meanwhile, mix together melted butter, vanilla, sugar and molasses in a large mixing bowl. Whisk in eggs, one at a time. Add bananas and mix. Then stir in bran mixture. In another bowl combine flour, flax, baking powder, baking soda, cinnamon and salt. Gradually fold flour mixture into the egg mixture and whisk to just combine without overmixing. Dollop prepared mixture into muffin cups 2/3 full and bake for about 20 to 25 minutes.
