4 Large Granny Smith Apples1 Tablespoon Lemon Juice0.25 Cup Light Brown Sugar0.25 Cup Raisins0.25 Cup Pecans3 Tablespoons Unsalted Butter0.5 Cup Maple Syrup1 Cinnamon StickRemove the peel from the top 1/3 of each apple. Remove the core and seeds and make a canal 1 inch thick wide that stop 1/4 inch from the bottom of the apple. In a large bowl of cold water mix in lemon juice. Drop the apples into the juice mixture.In a large mixing bowl, place 1 tablespoon of brown sugar, raisins, pecans and 1 tablespoon of butter; mix with fingers. Drain any of lemon mixture that remain in the apples and stuff each apple with 1/4 of the mixture.Pour maple syrup in the crock pot. Stir in the remaining brown sugar, remaining butter and cinnamon stick. Place the apples into the mixture. Cover with a lid and cook on 4 hours on low or until the apples are tender. Use a slotted spoon to transfer the cooked apples to a bowl. In a saucepan over medium-high heat, transfer the sauce from the crockpot and bring to a boil and allow to cook, stirring occasionally, until reduced to about 1/2 C and becomes thick. Pour the sauce over the apples before serving.
