1 Carrot2 Tablespoons Sugar1 Large White Onion2 Cloves Garlic1 Teaspoon Dried Oregano1 Large Red Jalapeno1 Tablespoon Extra Virgin Olive Oil0.25 Teaspoon Salt & Freshly Ground Black Pepper28 Ounces San Marzano Tomatoes2 Tablespoons Tomato Paste3 Bay Leaves2 Tablespoons Soy SauceIn a large Dutch oven, heat oil and cook onion, carrot, garlic, red chili, dried oregano and a pinch of salt for about 5 minutes. Add tomatoes, tomato paste and bay leaves and simmer for about 30 minutes, stirring occasionally and breaking tomatoes with a wooden spatula. Stir in soy sauce, sugar, salt and black pepper and remove from heat. With an immersion blender, blend the sauce until smooth. Keep aside to cool completely. Transfer into airtight container and preserve in refrigerator or use immediately.
