Ingredients:
2 Medium Eggs1 Cup All-Purpose Flour0.5 Cup Club Soda3 Tablespoons Butter1 Cup Milk1 Pinch Salt1 Cup Confectioner's Sugar8 Ounces Cream Cheese1 Cup Ricotta CheeseStir together eggs, club soda, all-purpose flour, butter, salt and milk in a bowl and leave to rest for about 30 minutes.

Melt 1 tablespoon of butter in a sauté pan over medium heat. Pour 1 ladleful of the crepe batter into the pan. Now quickly tilt the pan to spread the batter evenly all over the base. Within about 2 minutes the batter will be set from top and lightly golden from the bottom. Flip the crepe and cook 2 more minutes from the other side. Transfer to a plate and repeat until all batter is gone.
