Ingredients:
1.5 Pounds Red Potatoes1 Tablespoon Vegetable Oil1 Medium Onion1 Clove Garlic1 Cup Chicken Broth1 Cup Fresh Parsley0.5 Teaspoon PepperPeel a strip of skin from around the middle of each potato. Then place in cold water and set aside.Heat a large skillet over medium-high heat then add oil. Saute onion and garlic for 5 minutes.
Mix in the broth and 3/4 cup of parsley and bring to a boil.
Place potatoes in a single layer in skillet. Bring to a boil again then reduce heat, cover and simmer for 10 minutes.Using a slotted spoon, transfer the potatoes to a serving bowl. Season the mixture in the pan with pepper then drizzle mixture over the potatoes. Sprinkle remaining parsley over the potatoes.
