Use a wooden spoon to break the meat up and saute until browned and cooked through about 10 minutes. Stir in garlic & ginger and saute for another 30 seconds. Add coleslaw mix & green onions and stir until combined. Continue to cook until cabbage wilts and is fragrant about 4 minutes. Stir in soy sauce & sesame oil and remove from heat. Arrange wrappers on work surface and add 3 tablespoons of the meat mixture to each one. Fold tightly according to package directions. Brush beaten egg on the edges of each wrapper to seal them. Layer a large platter with paper towels and set aside. In a Dutch oven over high heat, heat remaining oil until it registers 350 degrees on a deep-frying thermometer. Working in batches of 4 rolls at a time, fry egg rolls and turn them occasionally until they are golden brown on all sides, about 3-5 minutes. Transfer to prepared platter to drain. Wait until oil reaches 350 degrees again before frying another batch. Serve hot with ginger sauce.
