2 (1/4-Ounce) Packages Active Dry Yeast2 Cups Warm Buttermilk5.5 Cups All-Purpose Flour0.33 Cup Sugar2 Teaspoons Baking Powder1 Teaspoon Baking Soda2 Teaspoons Salt1 Cup Shortening0.25 Cup Melted ButterIn a small bowl, dissolve yeast in 1/4 cup of warm water and keep aside for about 5 minutes. Add buttermilk and stir to combine. Keep aside.In a large bowl, mix together flour, sugar, baking soda, baking powder and salt. With a pastry blender, cut in shortening until a coarse crumb-like mixture is formed. Add yeast mixture and mix until well combined. Place dough onto a lightly floured surface and with your hands, knead lightly for 3-4 times. Now, roll dough into 1/2-inch thickness. With a 2 1/2-inch round biscuit cutter, cut biscuits. Arrange biscuits onto lightly greased cookie sheets in a single layer about 2-inch apart. With kitchen towels, cover the cookie sheets and keep aside in a warm place for about 1 hour.Preheat the oven to 450 degrees. Bake for about 8-10 minutes or until top becomes golden brown. Remove from oven and coat top of each biscuit with melted butter lightly. Keep aside to cool slightly. Serve warm.
