1 Pound Phyllo Pastry Sheets1 Cup Vegetable Oil1 Pound Walnuts0.5 Pound Toasted Almonds1 Teaspoon Ground Cinnamon1 Cup Honey2 Cups Granulated Sugar2 Cups WaterIn a medium saucepan over medium-high heat, add honey, sugar and water and bring to a boil for 10 minutes. Set aside to completely cool.Preheat oven to 350 degrees. In a small bowl, combine nuts and cinnamon. On the bottom of a sheet pan, layer one sheet of phyllo at a time while brushing each one with oil. Sprinkle the top of the 8th sheet with nut mixture. Continue layering oiled phyllo sheets and sprinkling nut mixture every third sheet until nut mixture is gone.Spread remaining 4-5 phyllo sheets on top and drizzle with remaining oil. Cut into small diamond-shaped pieces and bake until golden brown, about 1 hour. Pour cooled honey syrup over warm baklava and sprinkle the top with pistachios.
