Ingredients:
1 Small Bunch Fresh Rosemary Sprigs4 Cups Champagne Vinegar1 Clove Garlic2 Lemon Zest StripsAfter rinsing rosemary sprigs, use paper towels to pat them dry. In a non-reactive saucepan over low heat, add vinegar and warm without simmering. Remove from heat.In a large non-reactive bowl, add rosemary, garlic & lemon zest. Pour warm vinegar over the herb mixture and stir to combine. Set aside to cool.After the mixture has cooled, cover the bowl tightly with plastic wrap and refrigerate for at least 2 or up to 4 weeks. Every few days, gently stir the vinegar mixture to blend the herb flavors.Use a fine-mesh sieve to strain the vinegar, discarding the herbs & garlic. Strain the mixture again through a coffee filter. Use a small funnel to transfer the vinegar into 2 bottles, one pint each. Seal bottles tightly with a lid or cork and store at room temperature for up to 2 months.
