8 Cups Water2 Large Lemons2.25 Teaspoons Salt1 Pound Large Shrimp2 Cups Fresh Basil Leaves12 Roasted Walnuts0.5 Teaspoon Freshly Ground Black Pepper0.5 Cup Extra-Virgin Olive Oil1 Large Shallot5 Cups Baby Arugula1 Small Head Of Frisee2 Cups RadicchioIn a large saucepan, over medium-high heat, add water, sliced lemon & 1 1/2 teaspoon salt and bring to a simmer. Add the shrimp and cook until they are opaque, for about 3 minutes. Drain and set aside.In the bowl of a food processor, combine the basil, walnuts, lemon zest, and remaining salt & pepper and pulse until roughly chopped. Gradually drizzle in the olive oil until the mixture is smooth. Stir in the shallot and transfer the pesto to a large salad bowl.Toss the arugula, frisee & radicchio with the pesto, and arrange the shrimp on top and serve.
