2.5 Cups All-Purpose Flour0.5 Teaspoon Salt1 Cup Chilled Butter0.5 Cup Ice WaterIn a large bowl, mix together flour and salt. With a pastry cutter, cut in butter until a coarse crumb-like mixture is formed. Slowly, add ice water, one tablespoon at a time and mix until a ball is formed. Divide into 2 equal dough balls and flatten into disks. With a plastic wrap, cover each disk and refrigerate for about 4 hours or overnight.For a single crust pie, place 1 disk onto a floured surface and roll into a circle about 1/4-thick that will fit in a 9-inch pie plate. Arrange the crust in pie plate and press the dough into the bottom and sides. Trim & use a fork to crimp edges attractively. Pour in filling & bake according to recipe instructions.For a double pie crust, roll out bottom crust, arrange in pie plate. Roll second crust into a 9-inch circle about 1/4-inch thick and cover topping. Trim edges & use a fork to crimp & seal crusts together. Bake according to recipe instructions.
This recipe makes 2 pie crusts for 2 single-crust pies or 1 double-crust pie. You can wrap individual disks in heavy aluminum foil and place in a resealable platic bag. Put in the freezer for up to 6 months.
