1 Tablespoon Extra Virgin Olive Oil2 Large Garlic Cloves1 Small Onion0.33 Cup Brown Sugar1 Tablespoon Molasses1 Small Seranno Chili Pepper0.5 Teaspoon Mustard Powder0.5 Teaspoon Cumin Seeds0.25 Teaspoon Sweet Paprika0.25 Teaspoon Ground Cinnamon0.25 Teaspoon Sea Salt & Freshly Ground Black Pepper1 Cup Apple Cider Vinegar2 Large PeachesIn a large skillet over medium-low heat, heat oil and add onions. Saute for 10 minutes, stirring until onions are softened. Add garlic and cook another 1 minute.Add brown sugar, molasses, chili pepper, and the other spices into the onion and garlic mixture. Stir in vinegar and peaches.Increase heat to medium-high and bring mixture to a boil. Reduce heat to low and simmer, stirring frequently for 30 minutes, until peaches break down and the mixture has thickened. Discard chili.In the bowl of a food processor, pour mixture carefully and puree. If mixture is too thick, add an additional 1 tablespoon of vinegar.Transfer sauce back to the skillet, and over low heat simmer for 5 minutes, stirring frequently. Allow the sauce to cool complelty, and transfer to small jars and refreigerate.
