Set aside.In a small saucepan over medium-high heat, combine vinegar & spices and bring to a boil. Reduce heat to low and simmer until reduced by half, about 10-15 minutes. Combine vinegar mixture with mustard mixture in a non- reactive bowl. Cover and refrigerate until mixture thickens, about 1-2 days. Add 2 tablespoons more of vinegar if mustard is too thick.In the bowl of a food processor, pulse into a coarse mixture. Store mustard in a covered jar in the refrigerator for up to 6 months.
