1 Cup Dried Garbanzo Beans2 Quarts Water1 Teaspoon Salt0.5 Teaspoon Freshly Ground Black Pepper1 Cup Coarse Bulgur Wheat2 Tablespoons Olive Oil1 Small Bunch Of Scallions3 Cloves Garlic0.5 Pound Fresh Shiitake Mushrooms2 Tablespoons Flat-Leaf Parsley2 Tablespoons Fresh Dill2 Tablespoons Fresh Mint1 Medium LemonIn a Dutch oven, add beans and 1 quart of water and soak overnight. Drain and rinse the beans well.In a Dutch oven, combine the beans and 4 cups of water and bring to a boil, and reduce to a simmer for an hour. Season with 1/2 teaspoon of salt and simmer for another hour.Drain the beans, reserving the cooking liquid. Soak the bulgur in the reserved cooking liquid for at least 30 minutes, or until tender & fluffy. Drain any excess liquid from the bulgur and set aside. Heat a large skillet over medium-high heat, heat oil and saute the scallions and garlic until fragrant, about 1 minute. Stir in the mushrooms and saute for another 3 minutes. Stir in the reserved beans and bulgur. Season with the minced herbs, and gently stir to combine. Garnish with lemon juice and season with the remaining salt.
