Add turmeric, ginger, cumin, and coriander and stir until combined. Add tomatoes, celery, carrots, cabbage, zucchini, pumpkin and garbanzo beans and stir well.Add 2 cups water, 1/2 teaspoon salt & pepper to the mixture and bring to a boil, and reduce to a simmer over low heat for about 20 minutes.Meanwhile, combine 2 cups of boiling water with the couscous and 1/2 teaspoon of salt in a saucepan, and over medium heat simmer for 15 minutes, and fluff with a fork. In a large serving bowl, combine the fluffed couscous with the vegetable mixture, and stir until just combined. Garnish with a sprinkle of cilantro.
