Ingredients:
4 Boneless Chicken Breasts2 Teaspoons Dried Thyme1 Tablespoon Kosher Salt2 Tablespoons Olive Oil1 Onion1 Large Carrot3 Cloves Garlic14 Ounces Chicken Broth2 Cups Rice0.25 Cup Fresh Parsley1 Bay Leaf1 Teaspoon Dried BasilSprinkle chicken breasts with thyme and salt evenly. Heat oil in a large skillet over medium heat and cook chicken till browned from both sides. Transfer chicken to a bowl and keep aside. In same skillet, add carrot and onion and sauté till tender. Add garlic and sauté for about 30 seconds. Add remaining ingredients and bring to a gentle boil. Arrange cooked chicken breasts over rice mixture. Simmer, covered for about 20 minutes or till all liquid is absorbed and rice is cooked.
