1.66 Cups Low Fat Sour Cream1.25 Cups All-Purpose Flour5 Cups Whole Milk0.75 Teaspoon Salt0.125 Teaspoon Cinnamon0.5 Teaspoon SugarIn a large saucepan, simmer sour cream covered over low heat for about 15 minutes, stirring frequently. Add 1/3 of the flour, stirring continuously and simmer 5 minutes more until a butterfat layer forms on top. Remove the rendered fat off the surface of the sour cream mixture, and reserve for service. Meanwhile, slowly heat the milk in a large saucepan until it is boiling.Add remaining flour to the sour cream mixture, and bring to a boil. Slowly transfer the boiled milk into the sour cream mixture, and whisk to combine. Continue to simmer for another 10 minutes, adjust seasoning as needed and top with reserved butterfat, cinnamon and sugar and serve.
