Here is one of my favorite classic salad recipes! It features crisp lettuce wedges filled with cherry tomatoes, diced onions, bacon, and a dash of white wine vinegar. Whisk in mayonnaise, sour cream, buttermilk, and lemon juice until a smooth, slightly lumpy dressing forms. Season with salt & pepper. Set aside. Set a fine-mesh strainer over a bowl and add diced tomatoes. Sprinkle with salt and toss to combine. Set aside. In another small bowl, combine the onion and vinegar. Set aside. In a small cast-iron skillet over medium-high heat, cook bacon, stirring occasionally, until crisp, about 5 minutes. Transfer bacon to a paper towel-lined plate to drain. In the same skillet with the rendered fats, brown the breadcrumbs for about 5 minutes. Arrange iceberg wedges on plates and drizzle dressing over each one. Drain quick-pickled onions and sprinkle all over salads, along with drained tomatoes, bacon, toasted bread crumbs, and chives.
