Reduce heat to medium-low and cook, covered for about 5 minutes. Increase heat slightly and cook, uncovered until all liquid is absorbed, stirring occasionally. Reduce heat and cook until carrots are tender enough, stirring occasionally. Serve hot with the garnishing of parsley.
