Set aside. Add the onion to the skillet and reduce the heat to low and saute for 5 minutes and stir in the carrots and saute for another 5 minutes. Add curry powder, ginger, and garlic and saute until very fragrant. Add the diced tomatoes and juice, chicken stock, heavy cream, and reserved chicken. Bring to a boil and reduce to a simmer for 30 minutes.Garnish with minced cilantro, and pair with steamed rice.
