On a sheet pan, arrange bacon and bake until golden brown, about 8 minutes. Remove pan and let it cool. Increase oven to 400 degrees. With a knife, slice scallops crosswise and cut bacon slices in half. Wrap each scallop with bacon half and secure with a toothpick. On the same sheet pan, arrange the scallops and bake until completely cooked, about 10 minutes. Meanwhile, in a large saucepan on medium-high heat, add cream and cook until it reduces to about 3/4 cup, about 3 minutes. Stir in syrup and mustard and cook until sauce thickens, another 3 minutes.
