4 Chicken Leg Quarters0.5 Tablespoon Salt & Ground Black Pepper3 Tablespoon Olive Oil0.75 Cup All-Purpose Flour2 Tablespoon Herbs De Provence1 Small Lemon1 Small Orange10 Cloves Garlic6 Medium Shallots0.3 Cup Dry Vermouth2 Pieces Sprigs Of Fresh ThymePreheat the oven to 400 degrees.Season chicken quarters with salt and pepper evenly.In a shallow dish, place flour. Coat each chicken piece with flour lightly, shaking to remove excess.In a large roasting pan, add oil and swirl it to coat evenly. Place the chicken in roasting pan and sprinkle with herbs de Provence. Arrange shallots, lemon and orange quarters and garlic cloves around the chicken pieces and top with vermouth.Roast for about 1 hour, basting with pan juice once halfway through. Remove from oven and serve with the garnish of the thyme sprigs.
