Ingredients:
1 Cup Unsalted Butter0.5 Cup Confectioners Sugar2 Teaspoons Salt2 Cups All Purpose Flour2 Tablespoons All Purpose Flour0.5 Teaspoon Baking Powder2 Large Eggs1.5 Cups Light Brown Sugar1 Tablespoon Dark Corn Syrup2 Cups Pecans1 Cup Sweetened CoconutPreheat oven to 375 degrees. In a bowl, add confectioners' sugar, butter and 1 teaspoon of salt and with an electric mixer, beat till light. Add 2 cups of flour and beat till dough is formed. Transfer the mixture into a 13x9-inch baking dish and level with the back of a spatula. Cover the baking dish with a plastic wrap and press the dough into the baking dish. Remove plastic wrap and bake for about 20-25 minutes. Meanwhile in a bowl, mix together 2 tablespoons of flour, baking powder and remaining 1 teaspoon of salt. Add eggs, corn syrup and brown sugar and with an electric mixer, beat untill light. Add flour mixture to egg mixture and gently stir to combine. Fold in coconut and pecans. Place pecan mixture over crust evenly. Bake for about 20-25 minutes. Remove from heat and keep aside to cool slightly. Carefully, run a metal spatula around the edges of warm mixture and place onto a wire rack to cool in pan before cutting. Cut into 24 equal sized bars and serve.
