Ingredients:
0.25 Pound Bacon0.66 Small Onion2 Large Russet Potatoes0.25 Cup Water2 Cloves Garlic1.33 Medium Scallions0.33 Teaspoon Smoked Paprika1 Teaspoon Kosher Salt0.66 Teaspoon Freshly Ground Black Pepper3 Large Eggs0.66 Cup Shredded Cheddar CheeseIn a large cast-iron skillet over medium-high heat, fry bacon until brown & crispy, about 10 minutes. Transfer bacon to a plate lined with paper towels to drain. Chop bacon and set aside. Keep bacon grease in the skillet.In the same skillet, add onions and saute until softened, for about 5 minutes. Stir in the cubed potatoes, add water, and cover with a lid. Cook potato mixture until tender, about 20 minutes.Stir in the minced garlic, scallions, paprika, 1 teaspoon salt & 1/2 teaspoon pepper. Using a wooden spoon, create four holes in the potato mixture to show the bottom of the skillet. Crack an egg into each hole and season the tops with remaining salt & pepper. Sprinkle cheese and bacon over mixture and replace the lid. Cook until the egg whites are set and the yolks are still soft about 5 minutes.
