Carefully, scoop out some of the insides to create 1-inch thick shell. Keep the halves aside. Season the chicken with black pepper evenly. In a large skillet, heat vegetable oil over medium-high heat and sear the chicken for about 3-4 minutes or until browned completely. Remove from heat and transfer to a bowl. Keep aside to cool for about 10 minutes. Add 1 teaspoon of garlic in the bowl of chicken and mix well. In another large bowl, add remaining garlic, sesame oil, soy sauce and hoisin sauce and mix until well combined. Add cooked chicken and toss to coat well. For pickled veggies: In a small pan, add sugar and vinegar and sugar over low heat and cook until the sugar is dissolved, stirring continuously. Stir in radishes and carrots and remove from heat. Keep aside to cool completely. In a colander, strain the vegetables, reserving about 1/8 cup of vinegar mixture in a small bowl. Arrange lettuce and cucumber on the bottom of bread half, and drizzle with reserved vinegar mixture. Top with chicken slices, followed by pickled veggies, cilantro and Sriracha. Cover with the top half of the bread. With a sharp knife, cut sandwich into four equal portions diagonally.
