4 Bone-In Pork Loin Chops4 Teaspoons Olive Oil0.75 Cup Apple Cider/Juice2 Tablespoons Brown Sugar2 Tablespoons Cider Vinegar2 Tablespoons Soy Sauce3 Cloves Garlic2 Teaspoons Prepared Mustard0.5 Teaspoon Ground Ginger8 Small Carrots0.5 Teaspoon Salt0.25 Teaspoon Black PepperHeat 3 teaspoons of oil in a large skillet over medium heat. Sauté pork chops until brown on both sides. Combine brown sugar, cider, vinegar, mustard, soy sauce, ginger and garlic in a small bowl. Pour the mixture over pork chops and bring to a boil. Once boiling, reduce heat and let simmer, covered, on low until tender, 15 to 20 minutes. In the meanwhile, place carrots on a baking sheet and drizzle with remaining 1 teaspoon of oil. Season to your taste. Bake uncovered for 15 to 20 minutes at 425 degrees, turning once in the middle. Serve baked carrots with pork chops.
