0.5 cup All Purpose Flour2 Tablespoons Butter1 Teaspoon Salt0 To Taste Freshly Ground Pepper1 Tablespoon Olive Oil0.5 Teaspoon Dried Thyme1 Tablespoon Fresh Lemon Juice1 Tablespoon Capers1 Tablespoon Parsley0.5 cup Dry Wite WinePour flour on a plate and season with salt and pepper to taste. Coat sole fillets with flour.
Melt 1 tablespoon of butter in a large skillet over medium high heat. Add 1 tablespoon oil to the skillet. Carefully place fillets over the skillet and sauté until browned, about 3 to 4 minutes per side.
Transfer browned fillets to a plate. Add in remaining 1 tablespoon of butter to the skillet along with wine, thyme, lemon juice and capers and bring to a boil. Cook for just 2 to 3 minutes or until liquid is slightly reduced.
Bring sole fillets back to the skillet to reheat. Sprinkle with parsley and serve.
