Add 2 eggs, milk, butter, honey, yeast and 1/3 cup of warm water and mix on low speed until well combined, scraping the sides of the bowl. (You can add extra 1/2 cup of flour if needed to form a soft dough) Mix on medium speed for about 8 minutes. Shape the dough into a ball. Place the dough ball into a lightly greased bowl. With a plastic wrap, cover the bowl and place in a warm place for about 2 hours, or until doubled in size. Line a cookie sheet with a lightly greased sheet of parchment paper and set aside. Transfer the dough onto a floured surface and sprinkle with a little flour. Divide the dough into 12 equal sized portions. With floured hands, shape each dough portion into a ball. Arrange the dough balls onto prepared baking sheet about 2-3 inches apart. With your hands, flatten each ball slightly. With cooking spray, spray the dough balls lightly. Cover the dough balls loosely and place at a warm place for another 1-2 hours. Preheat the oven to 400 degrees. Meanwhile, in a small bowl combine egg yolk and 1 teaspoon water and beat well. Coat each dough ball with egg wash and sprinkle with sesame seeds. Bake in the preheated oven for 10-15 minutes, turing the cookie sheet at least once during baking. Remove from the oven and transfer the baking sheet onto a wire rack to cool completely.
