2 Cups Dry White Wine6 Firm Bartlett Or Anjou Pears1 Stick Cinnamon0.25 Cup Lemon Juice4 (2-Inch) Strips Lemon Peel2 Cups Water0.5 Cup SugarIn a 9-inch saucepan, bring water to a boil with wine, sugar, cinnamon stick and lemon peel over moderate heat until sugar dissolves, stirring occasionally. Peel pears in the meanwhile with the stems still intact. Using a knife core the pear from blossom end. Drizzle some lemon juice over the pears so they don’t turn brown. Add the remaining lemon juice to the simmering syrup. Carefully place pears in syrup, stem side up. Let pears simmer uncovered until tender, about 1 hour, turning around 5 to 6 times for even simmering, but always the stem side up. Once tender, place the pears on serving plates, discard cinnamon, drizzle with poaching sugar syrup and refrigerate to chill before serving.
