6 Small Ripe Pears0.25 Cup Almonds Slivers1 Large Lemon1 Teaspoon Arrowroot0.5 Cup Robust Burgundy Wine1 Large Stick Of Cinnamon0.66 Cup Granulated Sugar0.66 Cup Water1 Cup Marscapone CheesePreheat the oven to 350 degrees. In a large saucepan, combine sugar, water, lemon rind, wine and water and cook on low heat, stirring frequently until the sugar is completely dissolved. Raise the heat, and bring the syrup to a boil.Line a cast iron skillet with the halved pears, and pour the syrup over the top and poach in the preheated oven for 30 minutes. Transfer the pears to a serving platter, and strain and reserve the poaching liquid. Meanwhile, combine the arrowroot powder with a tablespoon of water in a small bowl, and stir into the syrup. Bring to a boil, stirring frequently until the liquid is clear. On a serving dish arrange a poached pear, and top with a healthy portion of the syrup, and top with of a dollop of marscapone cheese and a sprinkle of the slivered almonds.
