2 Tablespoons Extra-Virgin Olive Oil1 Tablespoon Butter0.5 Cup Yellow Onion0.5 Cup Red Bell Pepper4 Medium Red Potatoes1 Teaspoon Coarse Salt1 Teaspoon Ground Black Pepper0.5 Teaspoon Smoked PaprikaIn a heavy 12-inch skillet, heat 1 tablespoon of oil over medium-high heat and cook bell pepper and onion for about 8-10 minutes, stirring occasionally. Transfer onion mixture to a bowl and keep aside.Meanwhile, in a large pan, add potatoes and enough water just until the tops of the potatoes are covered, over high heat. Bring to boil and immediately, remove from heat. In a colander, drain potatoes and keep aside for about 5 minutes.In the same skillet, onions and peppers were sautéed, heat remaining oil over medium-high heat. Place potatoes in a single layer and cook for about 4-5 minutes, without stirring. Carefully, flip and cook for about 10-15 minutes. Stir in cooked onion mixture, salt, black pepper and paprika and remove from heat. Serve hot
