Apple Fritters With Bourbon Ice CreamPT40M Serves 12 Ingredients: 1.5 Cups Sugar 3.25 Teaspoons Ground Cinnamon 2 Tablespoons Unsalted Butter 1 Pound Pink Lady Apples 0.5 Cup Sparkling Apple Cider 1 Tablespoon Apple Cider Vinegar 1.75 Cups All-Purpose Flour 1 Teaspoon Lemon Peel 1 Teaspoon Baking Powder 0.25 Teaspoon Ground Nutmeg 0.66 Cup Buttermilk 2 Large Eggs 2.5 Tablespoons Unsalted Butter 0.25 Teaspoon Coarse Kosher Salt 0 Safflower Oil 0 Bourbon Ice Cream For Cinnamon-Sugar Coating: In a large bowl, mix together 1 cup of sugar and 2 teaspoons of cinnamon. Keep aside till serving. For Filling: In a heavy large skillet, melt 2 tablespoons of butter over medium-high heat. Add apples, 2 tablespoons of sugar and ¼ teaspoon of cinnamon and toss to coat. Cook for about 10 minutes, stirring occasionally. Add vinegar and apple cider and cook for about 4 minutes, stirring occasionally. Remove from heat and keep aside to cool. For Fritter Base: In a large bowl, mix together flour, ½ cup of sugar, baking powder, 1 teaspoon of cinnamon, nutmeg and lemon peel. In a second bowl, add melted butter, buttermilk and egg yolks and beat till well combined. Slowly, add buttermilk mixture into flour mixture and mix till well combined. In a third bowl, add egg whites and salt and beat until peaks form. Gently fold egg whites into flour mixture. Now, fold in cooled apple filling. In a heavy large pan, heat about 5-6 cups of oil to 320-330 degrees over medium heat. Add the desired amount of apple mixture in batches and fry for about 4 minutes, flipping occasionally. With a slotted spoon, transfer fritters onto paper towels lined plate to drain. Add warm fritters in the bowl of sugar coating and toss to coat. Top with ice cream and serve immediately.
