Set aside. Filling: In a heavy large skillet, melt 2 tablespoons of butter over medium-high heat. Add apples, 2 tablespoons of sugar and ¼ teaspoon of cinnamon and toss to coat. In a third mixing bowl, add egg whites and salt and beat until peaks form. Gently fold egg whites into flour mixture. Now, fold in cooled apple filling. In a heavy large pan, heat about oil to 320-330 degrees over medium heat. Add the desired amount of apple mixture in batches and fry for about 4 minutes, flipping occasionally. With a slotted spoon, transfer fritters onto paper towels lined plate to drain. Add warm fritters in the bowl of sugar coating and toss to coat. Top with ice cream and serve immediately.
