Smart Recipes, Caribbean Recipes, Beef Recipes, Recipes Beef Caribbean Puerto Rican Plantain Sandwich Puerto Rican Plantain Sandwich Recipe | RecipeSavants.com PT30M Serves 2 Ingredients: 1 Large Green Plantain 0.25 Teaspoon Roasted Minced Garlic 1 Oil 2 Tablespoon Butter 2 Teaspoons Olive Oil 1 Cup Onion 2 Cloves Garlic 0.25 Teaspoon Ground Cumin 0.25 Teaspoon Cayenne Powder 6 Ounces Shoulder Steak 0.125 Teaspoon Salt & Freshly Ground Black Pepper 4 American Cheese Slices 1 Tablespoon Mayonnaise 2 Romaine Lettuce Leaves 1 Small Roasted Red Pepper In a skillet, heat oil and fry the plantain slices for about one minute. Remove from skillet and place onto a heavy cutting board. Return the flattened plantain to the skillet and cook until golden and crispy. Transfer the plantain slices to a paper towel-lined plate to drain. Tent with foil to keep warm. Heat 2 teaspoons olive oil and 1 tablespoon of butter over medium-high heat and sauté onions until tender. Add the garlic, cayenne and cumin and stir to combine. Add the steak and sauté until medium (just a few minutes). Stir in the salt and black pepper and remove from heat. In a bowl, add the 1 teaspoon melted butter and roasted garlic and mix well. Place the mayonnaise on the bottom slice of flattened fried plantain evenly and top with 2 cheese slices, followed by steak, onions, lettuce and tomato. Cover with the remaining plantain, and coat the sandwich in the garlic butter.
