Adana Kebab Recipe | PT30M Serves 6 Ingredients: 1 Pound Ground Lamb 1 Pound Ground Veal 4 Teaspoons Extra Virgin Olive Oil 4 Teaspoons Salted Butter 1 Red Bell Pepper 1 Medium Yellow Onion 3 Cloves Garlic 2 Medium Red Onions 3 Teaspoons Sumac 1 Teaspoon Lemon Juice 2 Teaspoons Red Pepper Flakes 2 Teaspoons Ground Coriander 2 Teaspoons Ground Cumin 2 Teaspoons Freshly Ground Black Pepper 2 Teaspoons Kosher Salt 3 Cups Turkish Pilaf 1 Cup Yogurt 1 Teaspoon Mint 1 Clove Garlic 0.125 Teaspoon Salt & Freshly Ground Black Pepper Mix red onion with 1 teaspoon sumac and lemon juice in a small bowl and chill in the refrigertor until service. Combine lamb, veal, diced onions and peppers in a large mixing bowl, mix until just combined. Stir in the remaining ingredients, cover and chilll in the refrigerator overnight. Preheat the grill pan over medium-high heat, and meanwhile shape the lamb mixture into 6x2 inch kebabs. Grill the kebabs 3-4 minutes per side. Meanwhile, combine yogurt sauce ingredients using a wire whisk. Serve the grilled kebabs topped with a healthy dollop of the spiced onions, and yogurt sauce along with the Turkish pilaf.
