2 Medium Red Onions3 Teaspoons Sumac1 Teaspoon Lemon Juice1 Pound Ground Lamb1 Pound Ground Veal1 Medium Yellow Onion1 Red Bell Pepper3 Cloves Garlic4 Teaspoons Extra Virgin Olive Oil4 Teaspoons Salted Butter2 Teaspoons Red Pepper Flakes2 Teaspoons Ground Coriander2 Teaspoons Ground Cumin2 Teaspoons Freshly Ground Black Pepper2 Teaspoons Kosher Salt3 Cups Turkish Pilaf1 Cup Yogurt1 Teaspoon Mint1 Clove Garlic0.125 Teaspoon Salt & Freshly Ground Black PepperMix red onion with 1 teaspoon sumac and lemon juice in a small bowl and chill in the refrigertor until service.Combine lamb, veal, diced onions and peppers in a large mixing bowl, mix until just combined. Stir in the remaining ingredients, cover and chilll in the refrigerator overnight.Preheat the grill pan over medium-high heat, and meanwhile shape the lamb mixture into 6x2 inch kebabs. Grill the kebabs 3-4 minutes per side.Meanwhile, combine yogurt sauce ingredients using a wire whisk. Serve the grilled kebabs topped with a healthy dollop of the spiced onions, and yogurt sauce along with the Turkish pilaf.
