Asian Pumpkin Chili Recipe | PT30M Serves 8 Ingredients: 1 Tablespoon Olive Oil 2 Cups Pumpkin 3 Cloves Garlic 1 Medium Onion 32 Ounces Zesty Tomatoes With Chilies 1.75 Cups Corn Kernels 32 Ounces Black Beans 3 Cups Water 1 Teaspoon Curry Powder 2 Tablespoons Chili Powder 0.5 Teaspoon Salt & Freshly Ground Black Pepper Heat oil over medium heat, sauté onion, garlic, chili powder, curry powder, salt and pepper for two minutes.  Add tomatoes and pumpkin and stir to incorporate with the spices. Gradually add water, 1 cup at a time till the desired consistency is achieved. Add in corn and beans and bring to a boil. Lower the heat to medium-low and cook covered for 10 minutes.
