4 Tablespoon Vegetable Oil4 Cup Popcorn Kernels8 Tablespoons Unsalted Butter8 Cups Semi Sweet Chocolate Chips4 Tablespoon Half & Half8 Tablespoons Sea SaltIn a large stockpot over medium heat, heat a tablespoon of oil. Add popcorn kernels to the pan and cover the lid until it starts to pop. Hold the lid in place with one hand and grab the pan with other, shake every 30 seconds until all the kernels are popped (you don't hear any more kernels hitting the pot). Remove from the heat and set aside.Prepare a double boiler, by placing a bowl in a small saucepan filled 2/3 with water, and combine butter, chocolate chips and half & half. Bring to a boil, and stir until a smooth chocolate sauce is formed. Pour the chocolate sauce over the popcorn and stir to coat the popcorn kernels. Spread the popcorn in a single layer on a cookie sheet, and sprinkle with sea salt evenly. Let the popcorn sit at room temperature for 4 hours. Transfer the popcorn into resealable containers for later use.
