Ingredients:
1 Cup Brown Rice1 Vegetable Broth1 Onion2 Cups Asparagus1 Bell Pepper2 Cups Baked Tofu0.33 Cup Dry Sherry0.25 Cup Fresh Cilantro1 Scallion1 Tablespoon Roasted Peanuts1 Lime1 Teaspoon Hot SauceHeat a skillet over high heat. Stir in a little vegetable broth, onion and bell pepper. Reduce the heat to medium and sauté for about 5 minutes, adding more broth if required. Transfer the onion mixture into a bowl. In the same skillet, add more broth and asparagus and cook till just bright green. Transfer the asparagus into the bowl with the onion mixture. In the same skillet, add more broth and sauté the garlic and ginger for about 30 seconds. Slowly, add the rice and some broth, stirring and breaking up any clumps. Stir and add broth as needed. Add the tofu, cooked veggies and sherry and cook for about 1 minute. Stir in the soy sauce, salt and pepper and remove from the heat. Stir in the scallions and hot sauce. Divide rice in serving bowls and serve with a topping of cilantro, peanuts and limes.
