Heat a Dutch oven over medium-high heat and cook bacon until browned, stirring frequently. With a slotted spoon, transfer bacon onto a paper towel lined plate to drain. Remove bacon grease from pan. In the same Dutch oven, add onions and garlic over the medium-high heat and stir well. Reduce heat to medium and cook for about 8 minutes. Add remaining ingredients and bring to a boil, stirring frequently. Reduce heat to low and simmer for about 2 minutes. stir the cooked bacon and simmer, uncovered till the mixture becomes thick and syrupy, stirring occasionally. In the bowl of a food processor, add bacon mixture and pulse till smooth. Transfer to a sealable canning jar (Mason) and refrigerate. This jam keeps for about a month in the refrigerator, or about 6 months in the freezer.
